  • 1 cup tomatoes, chopped (grape tomatoes recommended)

  • 2 cups shredded cheese (Colby and Monterey Jack mix)
  • 1 cup mayonnaise

Other

  • 1 (9 1/4 ounce) bag chili cheese Fritos, broken into preferred size
  • 1/4 cup cilantro, chopped

Instructions

  1. Prepare the base salad: In a large mixing bowl, combine the drained and rinsed sweet corn, chopped sweet peppers, red onion, chopped tomatoes, shredded Colby and Monterey Jack cheese, mayonnaise, and chopped cilantro. Stir well to evenly coat all ingredients.
  2. Chill the salad: Cover the bowl with plastic wrap or a lid and refrigerate for a few hours to allow the flavors to meld together and the salad to chill thoroughly.
  3. Add Fritos before serving: Just before serving, add the broken chili cheese Fritos to the salad and gently mix to combine. Serve immediately to maintain the crunchy texture of the Fritos.
