Description
Classic fluffy pancakes made from scratch, perfect for a hearty breakfast or brunch. These pancakes have a light and airy texture thanks to a simple batter resting step and are cooked to golden perfection on a griddle.
Ingredients
Scale
Dry Ingredients
- 1 and 1/2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1 teaspoon salt
Wet Ingredients
- 1 and 1/4 cups milk
- 1 large egg
- 3 tbsp butter, melted
Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
- Add Wet Ingredients: Whisk in the milk and egg until just combined, then add the melted butter and stir. The batter will be slightly lumpy, which is ideal.
- Rest Batter: Let the batter sit for about 10 minutes to thicken slightly. Meanwhile, heat a griddle or skillet to 350°F (175°C).
- Cook Pancakes: Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip and Finish: Flip the pancakes and cook for another 2-3 minutes, until golden brown on both sides. Remove from griddle and serve immediately while hot.
Notes
- Do not overmix the batter; lumps are fine and help keep pancakes tender.
- Allowing the batter to rest improves fluffiness and texture.
- Adjust griddle heat as needed to prevent burning or undercooking.
- Serve with maple syrup, fresh fruit, or your favorite toppings for a delicious breakfast.
