Ingredients
Scale
Meat and Vegetables
- 1½ pounds ground beef
- 1 large onion, diced finely
- 1 tablespoon garlic, minced
- ½ cup carrots, peeled and finely shredded
- 16 ounces coleslaw mix
Seasonings and Oils
- 2 tablespoons sesame oil
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon red pepper flakes
- 1½ teaspoons ground ginger
- ½ to ¾ cup low-sodium soy sauce
- 2 tablespoons vegetable oil
- Green onions, optional garnish
Instructions
- Cook Ground Beef: In a large deep-sided skillet over medium heat, cook the ground beef until no longer pink. Avoid breaking the beef into smaller pieces; keep pieces larger for texture.
- Cook Onions and Garlic: Drain excess grease from the beef, return skillet to the stovetop, add diced onions and minced garlic. Cook until onions become soft and translucent while maintaining the larger beef pieces.
- Add Vegetables and Sesame Oil: Add sesame oil, shredded carrots, and coleslaw mix to the skillet. Use tongs to toss and combine all ingredients well. Let cook together for about 5 minutes to soften the vegetables slightly.
- Prepare Sauce and Combine: In a small bowl, mix onion powder, garlic powder, red pepper flakes, ground ginger, soy sauce, and vegetable oil. Pour this sauce mixture over the meat and vegetable mixture in the skillet.
- Simmer: Reduce the heat to low and continue cooking the mixture for about 5 more minutes to allow the flavors to meld and the sauce to slightly thicken. Remove from heat and garnish with green onions if desired.
Notes
- Keep ground beef pieces larger for a better texture reminiscent of egg roll filling.
- Adjust soy sauce quantity based on taste preference and saltiness desired.
- Use low-sodium soy sauce to control sodium content.
- Coleslaw mix can include cabbage and shredded carrots but feel free to add other shredded vegetables if desired.
- Optional garnish with green onions adds fresh flavor and color.
- This dish can be served over rice or noodles if desired.
