- 1 packet taco seasoning
- 1/2 cup water
- 1 cup salsa
- 3/4 cup black beans, drained

Cream Cheese Mixture
- 16 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup Monterey Jack cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 4 ounces green chilies (1 small can, drained)
Toppings & Additional Cheese
- 1 cup Monterey Jack cheese, shredded (for topping)
- 1 cup cheddar cheese, shredded (for topping)
- Optional toppings: chopped tomatoes, avocados, onions, olives, jalapenos
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Lightly spray a 2.5-quart oblong casserole dish with cooking spray to prevent sticking.
- Cook ground beef: In a skillet over medium-high heat, brown the ground beef until it is no longer pink, breaking it apart as it cooks. Drain the excess grease thoroughly.
- Season and simmer: Add the taco seasoning packet, 1/2 cup water, and 1 cup salsa to the browned beef. Stir well and simmer until most of the liquid evaporates. Then stir in the drained black beans and corn. Remove from heat.
- Mix cream cheese layer: In a bowl, blend the softened cream cheese and sour cream until smooth and creamy. Fold in 1/2 cup Monterey Jack cheese, 1/2 cup cheddar cheese, and the drained green chilies until evenly combined.
- Assemble layers: Spread the cream cheese mixture evenly over the bottom of the prepared casserole dish. Carefully layer the seasoned ground beef mixture on top of the cream cheese layer. Then sprinkle the remaining 1 cup Monterey Jack cheese and 1 cup cheddar cheese evenly over the beef layer.
- Bake the dip: Place the casserole dish in the preheated oven and bake for about 20 minutes, or until the cheese on top is completely melted and bubbly.
- Add toppings and serve: Remove the dip from the oven and add your favorite fresh toppings such as chopped tomatoes, onions, avocados, olives, or jalapenos. Serve warm alongside tortilla chips for dipping.
- Storage: If you have any leftovers, store them in an airtight container in the refrigerator for 3 to 4 days. Reheat gently before serving again.

- To reduce salt, use low-sodium taco seasoning and salsa.
