  • 1 cup lukewarm water (mix ¼ cup boiling water with ¾ cup cold water)
  • 2 tbsp olive oil
  • Butter for greasing

  • 2 tsp minced or chopped garlic
  • Fresh rosemary leaves

Instructions

  1. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, instant yeast, and kosher salt until well combined.
  2. Add Water and Form Dough: Pour in the lukewarm water and mix with a spatula until the liquid is fully absorbed and a sticky ball of dough forms.
  3. First Rest and Rise: Lightly rub olive oil over the surface of the dough to prevent sticking. Cover and leave it on the counter at room temperature for about 1½ hours, allowing the dough to double in size slowly.
  4. Prepare Baking Dish: Generously coat an 8 or 9-inch dish with butter and pour 1 tablespoon of olive oil inside to grease the surface.
  5. Shape Dough: Place the risen dough into the prepared dish and gently roll it around in the olive oil to coat all sides. Let it rest for an additional 30 minutes to rise slightly.
  6. Preheat Oven: Set your oven to 425°F to heat while the dough rests.
  7. Add Toppings and Shape: Drizzle another tablespoon of olive oil over the dough, then sprinkle the minced garlic and fresh rosemary evenly on top. Use oiled fingers to press deep dimples into the dough and spread it out to evenly fill the dish.
  8. Salt and Bake: Sprinkle additional kosher salt on top for seasoning. Bake the focaccia on the center rack of your oven for approximately 25 minutes, until the bread turns golden brown and edges become crisp.
