  • Author: Hugo
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

This Easy Grilled Cheese Burrito is a delicious Taco Bell copycat recipe featuring seasoned ground beef, rice, creamy nacho cheese, zesty chipotle sauce, and a blend of cheddar and mozzarella cheeses all wrapped in a warm flour tortilla and grilled to crispy perfection. Perfect for a quick and satisfying meal that combines the best of a burrito and grilled cheese sandwich.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • ¼ cup water

Filling

  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Wrap and Cooking

  • 4 large flour tortillas
  • Butter or oil for grilling (optional, for skillet)

Instructions

  1. Cook the Beef (8–10 mins): In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease, then add the taco seasoning and ¼ cup water. Stir well and let it simmer for 5 minutes to develop flavors.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or briefly in the microwave to make them flexible and easier to roll without tearing.
  3. Assemble the Burrito (5 mins): Lay a warm tortilla flat on a clean surface. Layer with ¼ cup cooked white rice, a generous scoop of the seasoned beef, followed by nacho cheese sauce, chipotle sauce, and sour cream. Sprinkle with a mix of shredded cheddar and mozzarella cheeses.
  4. Grill the Burrito (3–4 mins per side): Preheat a clean skillet over medium heat. Sprinkle about 2 tablespoons of shredded cheese onto the skillet to create a crispy cheese crust. Place the burrito seam-side down on top of the melting cheese and grill until the cheese underneath melts and forms a crispy golden crust. Carefully flip the burrito and repeat on the other side for another 3 to 4 minutes until the outside is crispy and the cheese inside is melted.

Notes

  • Use homemade taco seasoning for a fresher, customizable flavor.
  • If you prefer, butter the tortillas lightly before grilling for extra crispiness.
  • Adjust chipotle sauce amount to control spiciness.
  • Ensure the skillet is not too hot to prevent burning the cheese crust.
  • Serve with salsa or guacamole for extra flavor.
