Description

This easy 15-minute Lo Mein recipe features tender egg noodles stir-fried with fresh vegetables and a savory homemade sauce. Perfect for a quick, satisfying meal, it combines cabbage, carrots, onions, and garlic with a rich blend of soy and oyster sauces, garnished with green onions for a delicious and authentic Asian-inspired dish.

Ingredients

Scale

Vegetables

  • 2 Carrots, sliced
  • 1/4 Yellow Onion, sliced
  • 3 cups Cabbage, thinly sliced (about 1/4 large cabbage)
  • 3 Garlic Cloves, diced
  • 1 bunch Green Onion (green part only)

Noodles

  • 8 oz Dry Egg Noodles (package or fresh)

Sauce

  • 2 tbsp Dark Soy Sauce
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar (or regular sugar)
  • 1 tbsp Water
  • 1 tsp Sesame Oil
  • 1 tbsp Corn Starch
  • 1/4 tsp White Pepper
  • 1 tbsp Oyster Sauce

Instructions

  1. Prepare Vegetables: Slice the onion, carrots, cabbage, garlic, and green onion (use only the green part of the onion). Set aside for later use.
  2. Make the Sauce: In a bowl, combine dark soy sauce, soy sauce, brown sugar, corn starch, water, oyster sauce, sesame oil, and white pepper. Mix thoroughly until all ingredients are fully blended.
  3. Cook Noodles: Bring a pot of water to a boil and cook the 8 oz egg noodles for 5 minutes until tender. Drain and immediately rinse under cold water to stop the cooking process and prevent sticking.
  4. Stir-Fry Vegetables: Heat a pan or wok over high heat. Add garlic, carrots, and onion and stir-fry for 2 minutes. Add cabbage and continue cooking for another 2 minutes until vegetables are tender-crisp.
  5. Combine Noodles and Sauce: Add the cooked noodles, prepared sauce, and green onions to the pan. Stir-fry everything together for about 1 minute until the noodles are fully coated with the sauce and heated through.
  6. Serve: Plate the Lo Mein immediately and enjoy your quick and delicious meal.

Notes

  • For a protein boost, consider adding cooked chicken, shrimp, or tofu when stir-frying the vegetables.
  • You can substitute brown sugar with regular white sugar if preferred.
  • If you don’t have egg noodles, spaghetti or other wheat noodles can be used as a substitute.
  • Adjust the soy sauce quantities to taste if you want a saltier or milder sauce.
  • Be careful not to overcook the noodles or vegetables to preserve texture.
