Ingredients
Scale
Vegetables
- 2 Carrots, sliced
- 1/4 Yellow Onion, sliced
- 3 cups Cabbage, thinly sliced (about 1/4 large cabbage)
- 3 Garlic Cloves, diced
- 1 bunch Green Onion (green part only)
Noodles
- 8 oz Dry Egg Noodles (package or fresh)
Sauce
- 2 tbsp Dark Soy Sauce
- 2 tbsp Soy Sauce
- 2 tbsp Brown Sugar (or regular sugar)
- 1 tbsp Water
- 1 tsp Sesame Oil
- 1 tbsp Corn Starch
- 1/4 tsp White Pepper
- 1 tbsp Oyster Sauce
Instructions
- Prepare Vegetables: Slice the onion, carrots, cabbage, garlic, and green onion (use only the green part of the onion). Set aside for later use.
- Make the Sauce: In a bowl, combine dark soy sauce, soy sauce, brown sugar, corn starch, water, oyster sauce, sesame oil, and white pepper. Mix thoroughly until all ingredients are fully blended.
- Cook Noodles: Bring a pot of water to a boil and cook the 8 oz egg noodles for 5 minutes until tender. Drain and immediately rinse under cold water to stop the cooking process and prevent sticking.
- Stir-Fry Vegetables: Heat a pan or wok over high heat. Add garlic, carrots, and onion and stir-fry for 2 minutes. Add cabbage and continue cooking for another 2 minutes until vegetables are tender-crisp.
- Combine Noodles and Sauce: Add the cooked noodles, prepared sauce, and green onions to the pan. Stir-fry everything together for about 1 minute until the noodles are fully coated with the sauce and heated through.
- Serve: Plate the Lo Mein immediately and enjoy your quick and delicious meal.
Notes
- For a protein boost, consider adding cooked chicken, shrimp, or tofu when stir-frying the vegetables.
- You can substitute brown sugar with regular white sugar if preferred.
- If you don’t have egg noodles, spaghetti or other wheat noodles can be used as a substitute.
- Adjust the soy sauce quantities to taste if you want a saltier or milder sauce.
- Be careful not to overcook the noodles or vegetables to preserve texture.
