Instructions

  1. Prepare Potatoes: Peel and chop the potatoes into even pieces. Transfer them to a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat. Cook for 15-20 minutes until the potatoes are fork-tender.
  2. Preheat Oven: While the potatoes cook, preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Melt Butter and Warm Cream: Melt the butter in a microwave-safe bowl and warm the heavy cream separately. Set both aside to use in the potato mixture.
  4. Drain and Mash Potatoes: Drain the cooked potatoes thoroughly and return them to the pot over low heat to evaporate any excess moisture. Mash the potatoes using a potato ricer or masher until smooth and free of lumps.
  5. Add Ingredients: Stir in 2 tablespoons of melted butter, warm heavy cream, grated Parmesan cheese, salt, and black pepper into the mashed potatoes. Mix well and then fold in the egg yolks until fully combined.
  6. Pipe Potato Mixture: Transfer the potato mixture to a piping bag fitted with a large star tip. Pipe small swirled mounds or rosettes onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Brush and Bake: Brush the remaining melted butter over the piped potatoes. Bake in the preheated oven for 15-20 minutes until edges are golden brown and the tops are slightly crispy.
  8. Garnish and Serve: Remove from the oven and sprinkle with fresh chopped chives or parsley and a light sprinkle of sea salt. Serve immediately and enjoy your elegant Duchess Potatoes.
