This keeps any potential bag tears contained and makes cleanup simpler. Scoop out 2 tablespoons of the crushed candy canes and set aside for topping.
  3. Melt: Transfer the dark chocolate chips to a medium-sized microwave-safe bowl. Microwave in 30-second increments, stirring thoroughly after each interval, until the chocolate is fully melted and smooth, about 1 minute 30 seconds to 2 minutes total. Stir in the crushed candy canes and peppermint extract if using, blending evenly.
  4. Spread: Pour the chocolate and crushed candy cane mixture onto the prepared sheet pan. Spread it evenly with a spatula or the back of a spoon.
