Vinaigrette
- 3 Tbsp olive oil
- 1/2 cup lemon juice
- 1 tablespoon fresh ginger, peeled and grated
- 2 tablespoons clover honey
- 1/2 teaspoon sea salt
Instructions
- Chop the Ingredients: Either chop all the vegetables, nuts, and seeds finely using a sharp knife, or place them individually into a food processor and pulse a few times until finely chopped to your preferred texture.
- Make the Vinaigrette: In a mason jar, combine olive oil, lemon juice, grated fresh ginger, clover honey, and sea salt. Seal the jar and shake vigorously until well blended. Alternatively, whisk these ingredients together in a small bowl until emulsified. For best flavor, refrigerate the vinaigrette for up to an hour before use.
- Toss the Salad: Place all chopped salad ingredients in a large mixing bowl. Pour the prepared vinaigrette over the salad and toss thoroughly to evenly coat all components with the dressing.
Notes
- Using a food processor can speed up preparation and ensure even chopping, but careful not to over-process into mush.
- The vinaigrette can be made ahead and stored in the refrigerator for up to 3 days.
