Description

This Creative & Cute Strawberry Shortcake Sushi Roll is a delightful twist on a classic dessert. Featuring a light sponge cake rolled with a creamy, sweetened cream cheese filling, fresh diced strawberries, and a layer of strawberry preserves, this treat is both visually appealing and delicious. Perfect for parties or a fun homemade dessert, it combines the flavors of traditional strawberry shortcake with the playful presentation of sushi rolls.

Ingredients

Scale

Cake

  • 1 sponge cake sheet (approx. 10×15 inches, homemade or store-bought)

Filling

  • 8 ounces (225 g) cream cheese, softened
  • ½ cup (60 g) powdered sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) whipped cream
  • 1 ½ cups (225 g) fresh strawberries, diced
  • 3 tablespoons (45 g) strawberry preserves or jam

Optional Garnish

  • White chocolate drizzle
  • Extra whipped cream
  • Mint leaves

Instructions

  1. Prepare the cake: Lay the cooled sponge cake sheet flat on a piece of parchment paper or a rolling mat to ensure it doesn’t stick and is easy to handle.
  2. Make the filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and creamy. Gently fold in the whipped cream to create a light, fluffy filling.
  3. Assemble the roll: Spread the strawberry preserves evenly over the surface of the cake. Then, spread the cream cheese and whipped cream mixture evenly on top of the preserves. Sprinkle the diced fresh strawberries evenly over the cream layer.
  4. Roll: Starting from one of the short ends of the cake, use the parchment paper to carefully help roll the cake into a tight log shape. Ensure it is rolled firmly but gently to prevent cracking. Wrap and chill the roll in the refrigerator for 20 to 30 minutes to allow it to set.
  5. Slice & serve: Using a sharp knife, cut the chilled roll into 1-inch thick pieces. Arrange the sushi roll slices on a serving platter. Optionally, drizzle with white chocolate, add extra whipped cream dollops, and garnish with fresh mint leaves for a beautiful presentation.

Notes

  • Use a flexible and fresh sponge cake sheet to prevent cracking while rolling.
  • Chilling the roll before slicing helps maintain its shape and makes cutting easier.
  • Feel free to substitute strawberries with other fresh fruits such as blueberries or raspberries for variety.
  • For extra sweetness, you can add a drizzle of honey or additional powdered sugar to the cream filling.
  • Make sure the cream cheese is softened well to avoid lumps in the filling.
