- 3 tbsp (44.36 ml) Olive oil
- 1 tbsp (8 g) Vegan butter, or regular butter, optional
- 1 tsp (4 g) Sugar, optional
- 4 cloves (12 g) Garlic, minced
For the Sauce:
- ¾ cup (90 g) Oat cream, or regular heavy cream
- 1 cup (100 g) Vegan Parmesan cheese, or regular Parmesan cheese
- 2 tbsp (29.57 ml) Chili oil
- Seasonings to taste: smoked paprika, onion powder, garlic powder, dried oregano, sweet paprika, salt, and pepper

- Fresh parsley, chopped
Instructions
- Caramelize the Onions: Heat olive oil and optional butter in a skillet over medium heat. Add the sliced onions and sprinkle with salt and pepper. Cook until softened, about 5 minutes. Stir in minced garlic and optional sugar, then add 1 cup of water. Continue cooking for 25–30 minutes, stirring occasionally, until the onions turn golden and caramelized. Deglaze the skillet with water as needed to prevent sticking.
- Cook the Pasta: While the onions are caramelizing, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta cooking water and then drain the pasta.
- Make the Sauce: Add smoked paprika, onion powder, garlic powder, dried oregano, sweet paprika, and chili oil to the caramelized onions in the skillet. Stir well to combine. Then, stir in the vegan Parmesan cheese and oat cream. Simmer the sauce for 5–7 minutes until it thickens. If the sauce is too thick, adjust consistency by adding reserved pasta water gradually.
- Combine Pasta and Sauce: Add the cooked pasta directly into the skillet with the sauce. Toss the pasta to coat evenly with the creamy caramelized onion sauce. Taste and adjust seasoning with salt and pepper as desired.
- Garnish and Serve: Serve the creamy vegan caramelized onion pasta hot, garnished generously with fresh chopped parsley and additional vegan Parmesan cheese if desired for an extra burst of flavor.
