Cheese Mixture

  • 1 (10 oz.) package Frozen Spinach, thawed and drained really well

Pastry & Egg Wash

  • 1 box Puff Pastry Sheets (2 sheets)
  • 1 Egg
  • 1 Tbsp. Water

Instructions

  1. Prepare Egg Wash: In a small bowl, combine the egg and water, then beat together until thoroughly mixed. This will help the puff pastry brown nicely during baking.
  2. Make Cheese and Spinach Mixture: In a larger mixing bowl, combine the softened cream cheese, shredded Monterey Jack, garlic powder, and diced onion. Mix well until smooth. Fold in the thoroughly drained spinach and stir to combine evenly.
  3. Prepare Puff Pastry: Unroll the puff pastry sheets on a clean surface. Using a pastry brush, lightly brush both sides of each sheet with the prepared egg wash to add moisture and shine.
  4. Assemble the Roll Ups: Spread the cream cheese and spinach mixture evenly over one side of each puff pastry sheet, ensuring full coverage but leaving a small border along the edges to help seal when rolling.
  5. Roll and Slice: Carefully roll the puff pastry sheets tightly from the edge with the mixture to the opposite end, forming a log. Using a sharp knife, slice each roll into individual pinwheels of desired thickness.
