  • 10 cups chicken broth
  • 12 ounces wide egg noodles
  • 2 cups shredded chicken

Instructions

  1. Sauté Vegetables: In a large pot over medium-high heat, heat 2 tablespoons of olive oil. Add the sliced carrots, celery, and diced onion. Sauté the vegetables for 4 to 5 minutes, or until they become tender and fragrant. Then add the minced garlic, fresh thyme, salt, and pepper, continuing to sauté for an additional 1 minute to release the flavors.
  2. Cook Noodles: Pour in the 10 cups of chicken broth and add the 12 ounces of wide egg noodles. Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to a simmer and cook the noodles until they reach an al dente texture, approximately 10 minutes.
  3. Add Chicken and Simmer: Stir in the 2 cups of shredded chicken and 2 tablespoons of fresh parsley. Continue to simmer the soup just until the chicken is heated through. Taste and adjust seasoning with salt and pepper as needed before serving.
