Description

  • 8 Tbsp unsalted butter (plus more for greasing pan)
  • 16 oz mini marshmallows (divided into 6 cups and 2 cups)
  • 1 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 7 cups crispy rice cereal

Instructions

  1. Prepare the pan. Butter and line a 9×9 inch baking dish with parchment paper to ensure easy removal of the treats. Using a 9×13 inch pan is possible but will make the squares thinner.
  2. Melt the butter and marshmallows. In a large pot or Dutch oven, melt 8 tablespoons of unsalted butter over medium-low heat. Add 6 cups of mini marshmallows and stir continuously until they are completely melted and combined with the butter, being careful not to overcook as this could cause the mixture to harden.
  3. Add flavor and cereal. Remove the pot from heat and immediately stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of fine sea salt. Quickly add the 7 cups of crispy rice cereal, folding gently to coat the cereal evenly. Then fold in the remaining 2 cups of mini marshmallows until they start to melt but still remain slightly chunky for texture.
  4. Transfer and press the mixture. Pour and evenly spread the marshmallow-cereal mixture into the prepared baking dish. Place a sheet of plastic wrap or parchment paper over the top to prevent sticking, and lightly press it down evenly over the surface to compact the mixture.
  5. Cool and cut. Allow the treats to cool completely at room temperature for about 1 hour. Once set, remove from the pan and slice into squares for serving.

Notes

  • Using mini marshmallows helps the treats stay chewy and soft while the larger marshmallows add texture.
  • Pressing the mixture evenly but gently will ensure the treats hold their shape without becoming too dense.
  • Store leftovers in an airtight container at room temperature for up to 3 days for optimal texture and freshness.
  • You can add mix-ins like chocolate chips or sprinkles after folding in the cereal for variation.
