Instructions
- Make the crust: In a food processor, combine the pecans and rolled oats until finely ground. Then add the pitted dates, peanut butter, and maple syrup to the processor and blend until the mixture forms a sticky dough. Press the mixture firmly and evenly into an 8×8-inch or 9×9-inch baking dish lined with parchment paper. Place the pan in the freezer to chill for 10-15 minutes.
- Make the topping: Combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring well after each, until the chocolate is smooth and glossy.
- Assemble and chill: Remove the crust from the freezer and pour the melted chocolate evenly over the top. Sprinkle with pecan halves for garnish. Return to the freezer for at least 30 minutes to an hour, or until the chocolate has completely set. Cut into bars and serve.
