Perfect as a flavorful side dish for any meal.

Ingredients

Scale

Sweet Potatoes

  • 3 large sweet potatoes, sliced into 1/8th inch thick rounds

Sauce

  • 3 tablespoons salted butter (or vegan butter substitute)
  • ¼ cup flour (whole wheat, all purpose, or gluten free 1:1)
  • 2 cups milk (skim, 2%, or whole milk)
  • 8 ounces smoked gouda cheese or sharp cheddar, shredded (about 2 cups)
  • 34 tablespoons chipotle sauce from can of chipotle chiles in adobo (adjust for desired spiciness)
  • 1 teaspoon garlic powder
  • 1 ¼ teaspoon kosher salt, plus more to taste
  • Freshly ground black pepper, to taste

Topping

  • 2 ounces smoked gouda or sharp cheddar, shredded (about ½ cup)
  • ¼ cup grated parmesan cheese

To Garnish

  • Fresh chopped parsley

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Spray an 8×8 inch baking pan with nonstick cooking spray or grease it with butter or oil to prevent sticking.
  2. Arrange Sweet Potatoes: Place the sliced sweet potatoes in the pan in three slightly slanted rows. Arrange them with some space between slices so they are not too tight but slightly overlapping in a visually appealing pattern.
  3. Make the Sauce Base: In a medium saucepan, melt 3 tablespoons of butter over medium heat. Once melted, whisk in ¼ cup of flour and cook for 10-20 seconds until a paste forms, stirring constantly to avoid browning.
  4. Add Milk Slowly: Slowly add 2 cups of milk while whisking vigorously to prevent lumps. Keep whisking until the mixture is smooth and combined.
  5. Simmer and Thicken: Bring the sauce to a simmer, stirring occasionally, for several minutes until it thickens like gravy. If the sauce becomes too thick, add a tablespoon or two more milk to achieve desired consistency. Taste and adjust salt as needed.
  6. Flavor the Sauce: Remove the sauce from heat and stir in 2 cups shredded gouda cheese, garlic powder, and 3 tablespoons of chipotle adobo sauce. Season with freshly ground salt and pepper to taste. Add an extra tablespoon of chipotle sauce if you prefer it spicier.
  7. Pour Sauce Over Potatoes: Evenly pour the creamy chipotle gouda sauce over the arranged sweet potatoes, ensuring they are well covered.
  8. Bake Covered: Cover the baking dish with foil and bake for 45 minutes to 1 hour. The sweet potatoes are done when they can be easily pierced with a fork in the middle.
  9. Add Cheese Topping and Broil: Remove the foil and sprinkle the remaining ½ cup gouda cheese and ¼ cup parmesan cheese over the top. Set your oven to broil and broil on high for 1-2 minutes, watching carefully to avoid burning. The cheese should be melted and golden brown.
  10. Garnish and Serve: Remove the dish from the oven, garnish with fresh chopped parsley, and serve warm. Enjoy this smoky, cheesy, and spicy twist on classic scalloped sweet potatoes!

Notes

  • For a vegan version, substitute butter with vegan butter and use a plant-based milk and dairy-free cheese alternatives.
  • Adjust chipotle adobo sauce based on your preferred spice level.
  • Slicing sweet potatoes evenly (about 1/8 inch thick) ensures even cooking.
  • If sauce thickens too much before pouring, whisk in a little extra milk to loosen it.
  • Watch the broiler closely as cheese can burn quickly.
  • This dish pairs well with grilled meats, roasted vegetables, or as a hearty vegetarian entrée.
