Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and position the rack in the lower middle part of the oven. If your oven has a convection or forced air setting, turn it on for even cooking.
  2. Prepare the Pan: Grease a 9×13 inch baking dish with a bit of oil to prevent sticking. Arrange the split chicken breasts in a single, even layer in the prepared dish.
  3. Add the Seasoning: In a small bowl, combine the cumin, chili powder, garlic powder, paprika, salt, and pepper. Drizzle the olive oil over the chicken and sprinkle half of the fajita seasoning mixture on top of the chicken.
  4. Add the Vegetables: Spread the sliced onions and bell peppers evenly over the chicken breasts. Then sprinkle the remaining fajita seasoning evenly over the vegetables.
  5. Bake in the Oven: Generously top the layered ingredients with the shredded cheese. Place the casserole in the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 160°F (check with an instant-read thermometer).
