Description

This Cheesy Hamburger Potato Casserole is a hearty and comforting dish perfect for a family dinner. Layers of thinly sliced russet potatoes, savory ground beef, creamy mushroom sauce, and melted cheddar and mozzarella cheese come together for a rich and satisfying casserole that’s easy to prepare and bake in the oven.

Ingredients

Scale

Meat Mixture

  • 1 ½ lbs ground beef or ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Potato and Cheese Layers

  • 56 medium russet potatoes, thinly sliced (about 1/8 inch)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese (optional, for extra meltiness)

Sauce and Other

  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
  • 1 cup milk
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter to prevent sticking and add flavor.
  2. Cook the beef mixture: In a skillet over medium-high heat, brown the ground beef (or turkey) with the chopped onion until fully cooked through and no longer pink. Drain any excess fat to reduce greasiness. Stir in the minced garlic, salt, black pepper, and paprika (if using) until evenly combined and fragrant.
  3. Prepare the sauce: In a medium bowl, whisk together the cream of mushroom soup and milk until smooth and well blended. This mixture will create a creamy sauce that coats the casserole layers.
  4. Assemble the casserole – first layer: Arrange half of the thinly sliced potatoes evenly on the bottom of the prepared baking dish. Spread half of the cooked beef mixture evenly over the potatoes. Pour half of the creamy soup sauce over the beef, then sprinkle with 1 cup of shredded cheddar cheese.
  5. Assemble the casserole – second layer: Repeat the layering process with the remaining potatoes, beef mixture, and sauce. Finally, top the casserole with the remaining 1 cup of cheddar cheese and the shredded mozzarella cheese if desired, for extra cheesiness.
  6. Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45 minutes. This allows the potatoes to cook through and the flavors to meld.
  7. Bake uncovered: Remove the foil and bake for an additional 15–20 minutes uncovered, until the potatoes are tender, the cheese is fully melted, bubbly, and golden brown on top.
  8. Rest and serve: Let the casserole rest for 5 minutes after baking to help it set. Serve warm, ideally alongside a fresh green salad or steamed vegetables for a balanced meal.

Notes

  • For a lower-fat option, use ground turkey and reduced-fat cheese.
  • Can substitute cream of chicken soup if preferred or for a different flavor profile.
  • Make sure potato slices are thin (about 1/8 inch) to ensure even cooking.
  • Leftovers can be refrigerated up to 3 days or frozen for up to 2 months.
  • To reheat, bake covered at 350°F (175°C) until warmed through.
