Instructions

  1. Dice the chicken: Using a sharp knife, cut the chicken breasts into 1/3-inch thick pieces. For easier slicing, partially freeze the chicken beforehand. Place the diced chicken into a large mixing bowl.
  2. Prepare the batter: Add 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour (or starch alternative), shredded mozzarella, chopped dill, salt, and pepper to the bowl with the diced chicken. Stir thoroughly until all ingredients are evenly combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight to allow flavors to meld and the batter to firm up.
  3. Cook the fritters: Heat a large non-stick pan over medium heat and add 2 tablespoons of oil. Once the oil is hot, spoon heaping tablespoons of the chicken mixture into the pan. Flatten each spoonful slightly with the back of the spoon for even cooking. Sauté uncovered for 3 to 4 minutes on the first side until golden brown. Flip and cook another 3 minutes on the second side until the fritters are fully cooked through and have a golden-brown crust. Repeat this process with the remaining batter, adding more oil to the pan as needed.
