Instructions

  1. Make the brown sugar balsamic glaze: In a small saucepan over medium heat, combine the balsamic vinegar and brown sugar. Stir to dissolve the sugar, then bring the mixture to a simmer. Let it simmer gently for 6 to 8 minutes until the glaze thickens visibly and coats the back of a wooden spoon without immediately flooding the scraped area. Remove from heat and allow to cool.
  2. Prepare the caprese filling: In a mixing bowl, combine the halved cherry tomatoes, chopped fresh basil, and mozzarella pearls. Drizzle with the extra virgin olive oil and mix gently to combine. Season with salt and pepper to taste.
  3. Prepare the avocados: Carefully cut each avocado in half and remove the pits without damaging the flesh, creating a hollow center for stuffing.
  4. Assemble the stuffed avocados: Spoon the caprese mixture into the hollow of each avocado half, filling generously.
  5. Finish and garnish: Drizzle each stuffed avocado half with the cooled balsamic glaze. Add extra salt and pepper if desired and garnish with fresh basil leaves for an attractive presentation.
