Main Ingredients
- 1.5 lbs cooked chicken, shredded
- 5 cups riced cauliflower (raw)
- 1/2 cup buffalo sauce
- 8 oz cream cheese, room temperature
- 2 cups cheddar cheese, shredded, divided
- 1/4 cup buffalo sauce (for garnish)
- Parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and prepare a 9×13 inch casserole dish by lightly greasing or leaving it ungreased as desired.
- Mix Ingredients: In a large bowl, combine the shredded cooked chicken, riced cauliflower, 1/2 cup buffalo sauce, cream cheese, and 1 cup of shredded cheddar cheese. Mix thoroughly until a very thick and uniform mixture forms.
- Assemble Casserole: Transfer the thick mixture into the prepared casserole dish, spreading and leveling it evenly across the dish.
- Add Cheese Topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the mixture.
- Bake Covered: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 25 minutes to allow the casserole to heat through and start melting the cheese.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese topping is fully melted, bubbly, and slightly golden.
- Garnish and Serve: Remove from oven and garnish with extra buffalo sauce drizzled on top and chopped parsley. Serve immediately while hot and enjoy.
Notes

- Use cooked chicken from rotisserie or leftover cooked chicken for convenience.
- Adjust buffalo sauce quantity to taste if you prefer extra mild or spicy heat.
- Room temperature cream cheese blends more easily into the mixture for smooth texture.
- This casserole can be made ahead and refrigerated; reheat covered in the oven before serving.
