Ingredients

Scale

Main Ingredients

  • 1.5 lbs cooked chicken, shredded
  • 5 cups riced cauliflower (raw)
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese, room temperature
  • 2 cups cheddar cheese, shredded, divided
  • 1/4 cup buffalo sauce (for garnish)
  • Parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and prepare a 9×13 inch casserole dish by lightly greasing or leaving it ungreased as desired.
  2. Mix Ingredients: In a large bowl, combine the shredded cooked chicken, riced cauliflower, 1/2 cup buffalo sauce, cream cheese, and 1 cup of shredded cheddar cheese. Mix thoroughly until a very thick and uniform mixture forms.
  3. Assemble Casserole: Transfer the thick mixture into the prepared casserole dish, spreading and leveling it evenly across the dish.
  4. Add Cheese Topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the mixture.
  5. Bake Covered: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 25 minutes to allow the casserole to heat through and start melting the cheese.
  6. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese topping is fully melted, bubbly, and slightly golden.
  7. Garnish and Serve: Remove from oven and garnish with extra buffalo sauce drizzled on top and chopped parsley. Serve immediately while hot and enjoy.

Notes

  • Riced cauliflower can be found pre-packaged or made at home by pulsing raw cauliflower florets in a food processor.
  • Use cooked chicken from rotisserie or leftover cooked chicken for convenience.
  • Adjust buffalo sauce quantity to taste if you prefer extra mild or spicy heat.
  • Room temperature cream cheese blends more easily into the mixture for smooth texture.
  • This casserole can be made ahead and refrigerated; reheat covered in the oven before serving.
