  • 2 tablespoons tomato paste
  • ¼ cup (57.5 g) sour cream
  • ½ cup (50 g) parmesan cheese, grated
  • 1 can (15 ounces) sweet corn, drained

Instructions

  1. Cook noodles: Bring a large pot of salted water to a boil. Add the cavatappi noodles and cook according to package directions until al dente, approximately 8-9 minutes. Drain and set aside.
  2. Season shrimp: While the noodles are cooking, evenly coat the raw shrimp with the blackened seasoning and set aside.
  3. Melt butter and cook shrimp: Heat a large skillet over medium-high heat and melt the unsalted butter. Add the seasoned shrimp in a single layer and cook for 4-6 minutes, flipping halfway through until shrimp are cooked through and opaque. Transfer shrimp to a plate and keep warm.
  4. Add and simmer cream: Using the same skillet, lower the heat to medium and pour in the heavy cream. Bring it to a low simmer, scraping the browned bits from the bottom of the pan to incorporate flavor.
  5. Add tomato paste, sour cream, and parmesan: Reduce heat to low and stir in tomato paste, sour cream, and grated parmesan until the cheese is fully melted and the sauce is smooth and creamy.
  6. Toss pasta, shrimp, and corn in sauce: Add the cooked cavatappi noodles, cooked shrimp, and drained sweet corn to the sauce. Toss everything gently to coat evenly with the creamy sauce.
  7. Garnish and serve: Sprinkle chopped green onions over the pasta for a fresh touch and serve immediately while warm.
