  • Author: Hugo

  • Yield: 2 servings 1x
  • Diet: Vegetarian

Description

These crispy and flavorful Beet Fries are a delicious and healthy alternative to traditional potato fries. Roasted to perfection with a blend of harissa spice, cumin, and a touch of Parmesan cheese, these beet fries make an excellent snack or side dish that’s both vibrant and satisfying.

Ingredients

Scale

Beet Fries

  • 2 large red or golden beets
  • 1 tablespoon olive oil
  • 1 teaspoon harissa spice
  • 1/4 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons Parmesan, grated
  • Parsley, chopped (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit and line a baking pan with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Beets: Peel the beets and slice off both ends. Cut the beets into 1/4 inch long slices to resemble fries for even cooking and crispy texture.
  3. Season the Fries: Lay the beet slices on the prepared baking pan. Drizzle olive oil over them and use your hands to coat them evenly. Sprinkle with harissa spice, cumin, and a dash of salt and pepper to infuse bold flavors.
  4. Roast the Beets: Place the baking pan in the oven and roast for 15-25 minutes. Flip the fries halfway through the cooking process (after about 10 minutes) to ensure they cook evenly on all sides. Test doneness by poking with a fork; they should be tender and soft.
  5. Add Parmesan and Serve: Remove the fries from the oven, immediately sprinkle the grated Parmesan cheese on top, and optionally garnish with fresh parsley. Serve hot with your favorite dipping sauce for a tasty treat.

Notes

  • For extra crispy fries, ensure the beet slices are cut uniformly thin.
  • You can substitute harissa with smoked paprika or chili powder for a different spice profile.
  • Parmesan adds a salty, cheesy flavor, but it can be omitted for a vegan option.
  • Serve these fries immediately after roasting to enjoy the best texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven to maintain crispness.
