Bang Bang Sauce

Instructions

  1. Prepare the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Mix well until smooth and set aside.
  2. Cook the Chicken: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper to taste, and cook for 5 to 6 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
  3. Scramble the Eggs: In the same pan, pour in the beaten eggs and scramble them gently until just set. Remove the eggs and set aside.
  4. Sauté the Vegetables: Add a drizzle of oil to the pan if necessary. Sauté the diced carrots and minced garlic for 2 to 3 minutes until softened. Then stir in the green peas and cook for an additional minute.
  5. Fry the Rice: Add the cold cooked rice to the pan with the vegetables. Stir-fry on high heat for 3 to 4 minutes, breaking up any clumps and allowing the rice to crisp slightly.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan with the rice and vegetables. Stir everything well to combine evenly. Add soy sauce and mix thoroughly to distribute flavor.
  7. Add Bang Bang Sauce: Pour the prepared bang bang sauce over the rice mixture and stir continuously until all the ingredients are well coated and heated through.
