Bang Bang Sauce

- Prepare the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Mix well until smooth and set aside.
- Cook the Chicken: Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper to taste, and cook for 5 to 6 minutes until browned and cooked through. Remove the chicken from the pan and set aside.
- Scramble the Eggs: In the same pan, pour in the beaten eggs and scramble them gently until just set. Remove the eggs and set aside.
- Sauté the Vegetables: Add a drizzle of oil to the pan if necessary. Sauté the diced carrots and minced garlic for 2 to 3 minutes until softened. Then stir in the green peas and cook for an additional minute.
