Blue Cheese Crust

  • 1 cup blue cheese, crumbled
  • 2 tablespoons panko bread crumbs
  • ½ tablespoon butter

Instructions

  1. Make the Marinade: In a 9×13” baking dish, whisk together olive oil, balsamic vinegar, salt, pepper, chopped green onions, and brown sugar until well combined to create a flavorful marinade.
  2. Score and Marinate the Steak: Score the top of the flank steak in 1-inch sections to allow the marinade to penetrate. Place the steak in the marinade and let it sit for 30–45 minutes per side, using a spoon to baste the marinade into the scored lines for maximum flavor absorption.
  3. Preheat the Broiler: Preheat your oven to high broil and position the rack near the top, ensuring it won’t touch the meat directly to allow even broiling.
  4. Initial Broil: Place the marinated flank steak on a broiler pan with the scored side facing up. Broil for 3 minutes, then flip and broil the other side for an additional 3 minutes to start cooking the steak evenly.
  5. Prepare Crust Mixture: Melt the butter in a small bowl and mix it with the panko bread crumbs. Have the crumbled blue cheese ready for the next step.
  6. Add the Blue Cheese Crust: Flip the steak again so the scored side is up. Press the blue cheese into the scored sections and evenly sprinkle the panko and butter mixture over the top of the steak to create a savory crust.
