  2. Preheat the Oven and Prepare the Roasting Pan: Set your oven to 350°F (175°C). Place the seasoned corned beef, fat side up, on a rack inside a roasting pan. If you don’t have a roasting pan with a rack, use an oven-safe rack placed inside a rimmed baking sheet or set the meat on a bed of chopped onions to keep it elevated.
  3. Add Water and Cover Tightly: Pour 1/2 inch of water into the bottom of the pan to create steam during baking. Then cover the pan tightly with aluminum foil to trap moisture and ensure even cooking.
