Instructions
- Combine Ingredients: In a blender, place the cherries, avocados, honey, cream, coffee, cocoa powder, vanilla extract, and melted dark chocolate.
- Blend Initially: Cover and blend for about 1 minute or until the mixture begins to move smoothly through the blender, breaking down all ingredients.
- Adjust Consistency: Stop blending, scrape down the sides of the blender, and add a bit more heavy cream by the teaspoonful as necessary to keep the mixture moving smoothly without being too thick.
- Final Blend: Blend on high speed until the mixture is as smooth and uniform as possible; expect a thick but soft texture.
- Fill Popsicle Molds: Divide the blended mixture evenly among 6 to 8 popsicle molds depending on mold size.
- Set Popsicle Sticks: Shake molds back and forth to level the mixture, then place popsicle sticks into each mold appropriately.
- Freeze Popsicles: Place molds on a rimmed baking sheet for stability and freeze until firm, at least 6 hours.
- Serve or Store Popsicles: Unmold popsicles and serve immediately; leftover popsicles should be wrapped individually with freezer-safe wrap and returned to the freezer.
- Alternate Serving as Pudding: Instead of freezing, divide the mixture among 6 small containers with lids and refrigerate until chilled to your liking. The pudding will thicken slightly when chilled but is also thick right after blending.
