Instructions

  2. Mix Eggs and Sugars: In a medium bowl, use an electric mixer to beat the eggs, white sugar, and brown sugar until the mixture is light in color and creamy, approximately 2 minutes.
  3. Add Oil, Vanilla, and Pumpkin: Beat in the vegetable oil and vanilla extract for 1 to 2 minutes until well incorporated, then add the pumpkin puree and continue beating for another minute to combine all wet ingredients thoroughly.
  4. Combine Dry Ingredients: In a separate medium bowl, mix together the sifted flour, baking soda, baking powder, salt, and cinnamon until evenly blended.
  5. Mix Wet and Dry Ingredients: Gently add the dry ingredients to the wet ingredients and mix just until combined to avoid over-mixing which could toughen the cake. Then carefully fold in the diced apples evenly through the batter.
