Ingredients
Scale
Dough
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 egg
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/3 cup Swerve Sweetener
- 1 tsp baking soda
- 1/4 tsp salt
Cinnamon Coating
- 3 tbsp butter, melted
- 1/2 cup Swerve Granulated Sweetener
- 2 tbsp ground cinnamon
Sauce
- 2 tbsp butter
- 2 tbsp heavy cream
- 1/4 cup Brown Swerve Sweetener
- 1 tsp vanilla extract
- Pinch of salt
- Optional: pecans, stirred in once sauce is made
Instructions
- Preheat oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the monkey bread.
- Melt cheeses: In a microwave-safe bowl, melt shredded mozzarella and cream cheese together by heating in 30-second intervals, stirring between each until smooth and well combined.
- Add wet ingredients: Stir in the egg and vanilla extract into the melted cheese mixture, combining thoroughly.
- Mix dry ingredients: In a separate bowl, whisk together almond flour, Swerve Sweetener, baking soda, and salt.
- Make dough: Add the dry ingredients to the wet cheese and egg mixture. Use your hands to knead the dough until fully combined and uniform.
- Form dough balls: Divide the dough evenly into 24 small balls and set aside.
- Prepare cinnamon coating: In a small bowl, mix together Swerve Granulated Sweetener and ground cinnamon.
- Coat dough balls: Dip each dough ball into melted butter, then roll to coat well in the cinnamon sugar mixture. Place each coated ball into a bundt pan evenly.
- Make sauce: In a medium saucepan over medium-low heat, melt butter, heavy cream, brown Swerve Sweetener, and a pinch of salt. Bring the mixture just to a boil, then remove from heat and stir in vanilla extract. Optionally stir in pecans at this stage.
- Pour sauce: Pour the warm sauce evenly over the coated dough balls in the bundt pan.
- Bake: Bake the monkey bread in the preheated oven at 350 degrees Fahrenheit for 20-25 minutes, until the tops are golden brown and the sauce is bubbly.
- Cool and serve: Allow the monkey bread to cool for at least 10 minutes. Carefully invert onto a serving plate and enjoy warm.
Notes
- For best results, use fresh shredded mozzarella rather than pre-shredded to ensure better melting and texture.
- You can add chopped pecans or other nuts to the sauce for added crunch and flavor.
- If you prefer a stronger cinnamon flavor, increase cinnamon in the coating mixture slightly.
- Allow the monkey bread to cool sufficiently before inverting to prevent it from falling apart.
- Store leftovers covered in the refrigerator and reheat gently before serving.
