Glaze Ingredients

Instructions

  1. Cook Lentils: In a medium saucepan, combine brown lentils with water. Bring it to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are tender. Drain any excess water.
  2. Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for 5-7 minutes, or until the vegetables are soft and fragrant.
  3. Mix Ingredients: In a large bowl, mash the cooked lentils. Add the sautéed vegetables, rolled oats, breadcrumbs, flax egg, soy sauce, tomato paste, dried thyme, smoked paprika, salt, and pepper. Mix thoroughly until all ingredients are well combined.
  4. Shape Loaf: Line a loaf pan with parchment paper or lightly grease it. Transfer the lentil mixture into the pan and shape it firmly into a loaf shape.
  5. Prepare Glaze: In a small bowl, whisk together ketchup, maple syrup, and balsamic vinegar until smooth. Spread this glaze evenly over the top of the lentil loaf.
  6. Bake: Preheat your oven to 375°F (190°C). Place the loaf pan in the oven and bake for 45-50 minutes, until the meatloaf is golden brown on top and firm to the touch.
