Instructions

  1. Prepare the pickles: Lay the dill pickle slices on paper towels and let them rest for about 15 minutes to absorb excess liquid. Removing as much moisture as possible ensures the coating sticks well.
  2. Preheat the air fryer: Set the air fryer to 400°F to ensure it is ready for cooking once the pickles are prepared.
  3. Create a dredging station: Arrange three shallow bowls. In the first, mix the flour and salt. In the second, whisk together the eggs, pickle juice, cayenne pepper, and garlic powder. In the third, combine the panko breadcrumbs and fresh dill.
  4. Coat the pickles: Dip each pickle slice first in the flour mixture coating both sides and shaking off excess. Then dip into the egg mixture, followed by pressing into the panko and dill mixture to ensure a good, even coating.
  5. Air-fry the pickles: Working in batches, arrange the coated pickles in a single layer on a lightly greased tray inside the air fryer basket. Cook for 5 to 7 minutes until golden brown, then flip them, spritz with cooking spray, and air-fry for another 5 to 7 minutes until crispy. Add extra panko if the coating becomes wet or clumpy during the process.
