  • 1 (14.5-ounce) can green beans (drained)
  • 3 Tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes (with juices)
  • 1 (15-ounce) can black-eyed peas (drained and rinsed)
  • 1 (15-ounce) can corn (drained)
  • 4-6 cups beef broth (6 cups recommended)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili powder
  • Salt, pepper, and red pepper flakes to taste

Instructions

  1. Step 1: Heat the olive oil in a large Dutch oven over medium-high heat. Add the diced onion and celery and cook for 2-3 minutes until soft and translucent. Add the garlic and cook for another 1-2 minutes until fragrant.
  2. Step 2: Add the ground beef and cook until browned and no pink remains, breaking it up as it cooks.
  3. Step 3: Stir in the potatoes, carrots, green beans, tomato paste, diced tomatoes with juices, black-eyed peas, corn, Italian seasoning, smoked paprika, chili powder, and 4 cups of beef broth. Mix everything well. Add up to 2 more cups of broth to reach your desired soup consistency.
  4. Step 4: Increase the heat to high and bring the soup to a boil. Once boiling, reduce heat to medium-low, cover, and let simmer for 14-16 minutes, or until the potatoes are fork-tender.
  5. Step 5: Taste the soup and adjust seasoning with salt, pepper, and red pepper flakes as needed.
