Ingredients

  • 1 box strawberry cake mix with pudding in the mix (We used Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • 3/4 cup powdered sugar (90g)
  • 2 tablespoons strawberry preserves (40g, Bonne Maman recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15g, optional)

  2. Step 2: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix well until fully blended using a spoon or mixer.
  3. Step 3: Press the batter evenly into the prepared pan. Bake for 18-22 minutes, or until the brownies are just set. Allow them to cool completely before frosting.
  4. Step 4: To make the frosting, whisk together powdered sugar, strawberry preserves, milk, and cream cheese if you are using it, until smooth.
  5. Step 5: Spread the frosting evenly over the cooled brownies. Slice and serve.

Tips & Variations

  • Use cream cheese in the frosting for a tangy richness, or omit it for a lighter strawberry glaze.
  • Try swapping strawberry preserves with raspberry or cherry for a different berry twist.
  • For extra texture, sprinkle chopped nuts or white chocolate chips over the frosting.

Storage

Store the strawberry brownies in an airtight container in the refrigerator for up to 5 days. Allow them to come to room temperature before serving for the best flavor. You can also freeze the unfrosted brownies for up to 3 months; thaw before frosting and serving.

How to Serve

A close-up image shows a pink strawberry cake bar with two layers: a moist pink cake base and a smooth, light pink frosting layer on top. The bar is cut in half, resting on a white plate with a carved edge, and a fresh strawberry is partially visible in the corner. The cake’s texture looks soft and crumbly, with the frosting appearing creamy and slightly glossy. The background features a white marbled surface. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use a different size pan?

Yes, but adjust the baking time accordingly. A larger pan will result in thinner brownies and a shorter bake, while a smaller pan will make them thicker and require a longer bake.

Can I make these gluten-free?

To make gluten-free strawberry brownies, use a gluten-free strawberry cake mix and ensure your preserves and other ingredients are gluten-free as well.
