Ingredients
Scale
Dry Ingredients
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- ¼ teaspoon cinnamon
Wet Ingredients
- 1 large egg
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil (or melted butter)
- 1 cup eggnog (store-bought or homemade)
- 1 teaspoon vanilla extract
Add-ins and Topping
- ½ cup chopped pecans or walnuts (optional)
- ½ cup powdered sugar
- 2–3 tablespoons eggnog
- Pinch of nutmeg (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, salt, ground nutmeg, and cinnamon until evenly combined.
- Combine Wet Ingredients: In a large mixing bowl, whisk the egg, granulated sugar, brown sugar, vegetable oil (or melted butter), eggnog, and vanilla extract until the mixture is smooth and well blended.
- Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients, stirring just until combined. Be careful not to overmix, as this can make the bread tough.
- Add Nuts: Gently fold in the chopped pecans or walnuts, if you choose to include them, for added texture and flavor.
- Bake: Pour the batter into the prepared loaf pan and place it in the preheated oven. Bake for 45 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Cool: Allow the bread to cool in the pan for 10 to 15 minutes before transferring it to a wire rack to cool completely.
- Prepare Glaze and Finish: In a small bowl, mix the powdered sugar with 2 to 3 tablespoons of eggnog until smooth. Drizzle the glaze over the cooled bread and sprinkle a pinch of nutmeg on top for garnish.
Notes
- For a richer flavor, substitute vegetable oil with melted butter.
- Use fresh or store-bought eggnog; homemade gives a more intense flavor.
- Do not overmix the batter to keep the bread tender.
- Chopped nuts are optional but add a nice crunch.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
