  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • ½ jalapeño, diced (and seeded if you want less spice)

  • 1 teaspoon chili powder

  • 1 (15 ounce) can black beans, drained and rinsed

Instructions

  1. Sauté Aromatics: Heat olive oil in a large oven-proof skillet over medium heat. Add diced onions, minced garlic, and diced jalapeño. Cook for 3-5 minutes until onions are translucent and garlic is fragrant.
  2. Cook Butternut Squash: Stir in the cubed butternut squash, cumin, chili powder, and season with salt and pepper. Cook, stirring occasionally, until the squash is fork tender but still holds its shape, about 10 minutes. Covering the pan with a lid can help speed up the cooking process by creating steam.
  3. Add Beans, Tortillas, and Sauce: Mix in the drained black beans, corn tortilla strips, and the entire can of red enchilada sauce. Stir thoroughly to combine all ingredients evenly.
  4. Simmer & Add Cheese: Reduce heat to medium-low and sprinkle half of the shredded cheese (½ cup) into the skillet. Stir gently and allow to simmer for a few minutes to heat through and meld flavors.
