- 1 7-ounce bag of Rolos (unwrapped)
Chocolate Coating
- 8 ounces chocolate chips or melting chocolate wafers
- 1 teaspoon coconut oil (optional, to thin chocolate)
Instructions
- Preheat Oven: Preheat your oven to 300 degrees Fahrenheit to prepare for softening the Rolo candies.
- Arrange Base Cookies: Place 36 mini Nilla wafer cookies evenly on a baking sheet lined with parchment paper.
- Add Rolo Candies: Place one unwrapped Rolo candy in the center of each cookie on the baking sheet.
- Heat Rollos: Heat the baking sheet in the oven for exactly 90 seconds. This softens the Rolos just enough without melting them completely.
- Top Cookies: Remove from oven and place another Nilla wafer cookie on top of each softened Rolo. Gently press down to sandwich but avoid squashing the candy.
- Chill Sandwiches: Immediately transfer the baking sheet to the refrigerator and chill for 15-20 minutes until the candy sets inside the cookie sandwiches.
- Melt Chocolate: Melt chocolate chips or wafers in a double boiler or microwave. If using chocolate chips, add 1 teaspoon of coconut oil to thin the chocolate for easier dipping.
- Dip Cookies: Using a chocolate dipping tool or fork, dip each cookie sandwich into the melted chocolate, ensuring an even coating. Tap off excess chocolate before placing back onto the parchment-lined baking sheet.
